Elevation opened its doors on December 11, 2000. The following year it was voted
Best New Restaurant in Aspen. Since its opening, we have continuously strived to create
a great Aspen dining experience. Excellent food and beverages are big a part of this experience as is good service, hospitality and a comfortable dining environment.
A Modern American Bistro:
Chef Drew Scott’s innovative menu is influenced by the cuisines of the American south, California, South America, and Asia, all integrated with classical French technique.
Some of Drew’s specialties include his pecan crusted pork chop and pistachio gnocchi.
Elevation’s team prides itself on its ability to deliver personalized attention and service.
In the past, the team has catered to parties as prestigious as Vogue and as local as the Highlands ski patrol, giving both these parties — and all others in between — the same personalized touch.
